Baked Chicken Parmesan Meatballs

Howdy y’all! Who else is on the new year healthy eating bandwagon?! One of my 2018 intentions is to feel better about my health so I’m trying my hand at the whole tracking your macros thing, but to be honest, I was skeptical going into it and am not convinced it’s for me yet.. But I really just need something to kick my butt into gear. I’m not a diet person at all and usually am okay just practicing moderation, not keeping junk food at home and exercising regularly. My crazy schedule this fall and holiday season got the best of me though, and I’ve got to do something to get back on track, so I’m giving it a go. Which brings us to chicken meatballs…

I’ve been making these meatballs for years. They’re an awesome meal prep item because they’re quick to assemble and can be baked then frozen and heated up later. These babies are made with ground chicken (you can also use ground turkey) and baked instead of pan seared, so they are resolution friendly 😉 I like to make a batch for dinner with pasta or zucchini noodles/spaghetti squash if you’re feeling low carb and save the leftovers to eat throughout the week. Make a meatball sandwich or my favorite is to add them to a salad for an easy protein fix. Check out the recipe!

Ingredients

  • 1 pound ground chicken
  • 1/2 cup minced onion
  • 1/3 cup plus 2 tbsp grated Parmesan cheese
  • 1/4 cup Italian breadcrumbs (use gluten free if desired)
  • 1 egg
  • 2 cloves minced garlic
  • 1 tbsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions

  1. Preheat oven to 400.
  2. Add all ingredients except 2 tbsp of the parmesan cheese to a bowl and combine with your hands until all ingredients are evenly distributed and mixture comes together in one big clump. 
  3. Line a baking sheet with foil. Shape mixture into golfball sized meatballs and place on the pan. This recipe makes roughly 10-12 meatballs.
  4. Bake for 15 minutes then sprinkle remaining 2 tbsp of Parmesan cheese on top of the meatballs. Return to the oven and bake an additional 3-5 minutes until cooked through.
