Sunday Reading V.2

Happy Sunday, friends! Hope everyone had a great week. I was crazy busy. It was one of those weeks where I felt like I had something scheduled every minute of every day.. meetings or errands during my lunch break, work outs or plans after work every night. Don’t get me wrong, I like being busy. I actually thrive off of always having something to do, so I consider busy a good week!

So, exciting things I did this week: made this Avocado Feta Dip for Super Bowl. Met with Katie from Hartley Social to talk about an event they have coming up, Sit With Us, all about empowering women and female entrepreneurship. I am so excited to be a panelist at the event. I’ll have more to share as it gets closer. I also attended an event, Stand to Support Refugees, hosted by the Episcopalian Migration Ministries and was so encouraged to see hundreds of people in our community coming together to support refugees and each other.

Meetings + hot chocolate

After a jam-packed week, I laid low on Saturday. Like, in a major way. I slept in til noon, which I NEVER do, then pretty much laid in bed all day. I started watching Shameless on Netflix.. I didn’t like it at first, but now I’m hooked. Anybody else a fan? I’m getting a little cabin fever and am craving an adventure, so I’m thinking about taking a trip for my 25th birthday in April. I’m thinking Cuba or somewhere in South America; so I spent some time researching that. My Sunday consisted of Church, running errands, going on a run, and making something fun for Super Bowl. I’ll give you a hint – it involves Girl Scout Cookies Cereal. Stay tuned for a recipe later this week! I went to a Super Bowl party, but TBH didn’t pay much attention until things got good at the end! I didn’t even see many commercials; did you have a favorite I should check out??

High: Huffington Post regrammed my Instagram post! Also got my Girl Scout cookies this week.. I think I’ve already finished over half a box of Caramel Delights in three days.

Low: I wasn’t able to get out of bed before 7 any day this week. Gotta get back on the early-riser train next week!
