Easy Cranberry Coffee Cake

Coffee cake is one of my favorite treats around the holidays. I mean, cake for breakfast, who doesn’t love?! I wanted to come up with a shortcut recipe that would be a low-stress baking project. So I came up with a recipe using boxed cake mix! It’s really pretty simple. You layer the cake batter with some crumbly brown sugar topping and it is so good! I brought some to work and my coworkers were obsessed. I will definitely be making this throughout the holiday.

If you’re not a fan of cranberries, you could also use blueberries or blackberries. And if you don’t have walnuts really any nut would work! A note about the sour cream/Greek yogurt: I tested the recipe with both and the sour cream is definitely better. I was trying for a lighter version with the Greek yogurt, and it still tastes great, but would recommend the sour cream if you’re choosing between the two.

Ingredients

  • 1 box yellow cake mix

  • 1/2 cup melted butter

  • 1 cup brown sugar

  • 1 cup chopped walnuts

  • 1 tbsp plus 1 tsp cinnamon

  • 3 large eggs

  • 1 1/2 cups sour cream or plain Greek yogurt

  • 1 cup fresh cranberries

Directions

  • Preheat oven to 350.

  • Remove 1/2 cup of cake mix from the box and combine with melted butter, brown sugar, chopped nuts and 1 tbsp cinnamon. 

  • In a separate mixing bowl, combine remaining cake mix with eggs, sour cream/greek yogurt, and 1 tsp cinnamon until batter is smooth. Fold in cranberries.

  • Pour half of the cake batter into greased 9x9 pan. Top with half of the crumb mixture. Repeat layers.

  • Bake for 50 minutes to an hour, until toothpick inserted into center comes out clean.
