One Pan Sweet Potato Chicken Sausage Hash

Hi friends! I’ve got a new recipe in partnership with al fresco and it’s all the things: healthy, quick, easy and delicious. This Sweet Potato Chicken Sausage Hash is perfect to whip up for a weeknight dinner, or can be meal prepped and quickly reheated. It would also be delicious for brunch with a fried egg on top, so I would double the recipe and make it on Sunday, saving the rest for lunch or dinner during the week. Chicken sausage is a staple in our house. al fresco’s product is fully-cooked, so you can quickly heat it up for an easy dinner. I always keep a package in the fridge for a healthy on-hand dinner on the fly!

Sweet Potato Chicken Sausage Hash, serves two

Ingredients

  • 2 al fresco Chicken Sausage, sliced 1/3 in thick, I love the Sweet Italian Style flavor, but Spinach and Feta or Roasted Pepper and Asiago would also be delicious!
  • 1 large or 2 small sweet potatoes
  • 1 small onion, diced
  • 2 cups fresh spinach
  • 1/3 cup sauerkraut
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika

Directions

  1. Poke holes in sweet potato with a fork, then microwave for 4 minutes, or use the potato setting if your microwave has it.
  2. Heat 1 tbsp olive oil over medium high heat, add chicken sausage. Cook for 3-4 minutes then flip chicken sausage and cook another 3 minutes.
  3. Let sweet potato cool, then dice into 1 in cubes.
  4. Remove chicken sausage from pan and set aside. Turn heat to medium, add 1 tbsp olive oil and diced onion. Let cook 3-4 minutes until onion softens.
  5. Add sweet potatoes, last tbsp olive oil and spices to pan and stir to combine. Turn up heat to medium-high and let cook 5 minutes.
  6. Stir potatoes and cook another 5 minutes.
  7. Add sauerkraut to pan and stir to combine.
  8. Add spinach on top of potato mixture and let sit for a minute to steam, then stir into mixture until fully wilted.
  9. Add back chicken sausage and stir fry for 2-3 minutes until sweet potatoes are fully cooked.
