Another healthy recipe coming atcha. I think I’ve mentioned several times that I love Greek food. Like I’m salivating right now thinking about a gyro. One of the best things about Greek food is tzatziki sauce! This creamy sauce is made with yogurt and cucumbers. I’ve tried to recreate it through this homemade version, not completely traditional but works for me.
I use greek yogurt, cucumbers, lemon, red wine vinegar and garlic, all ingredients I usually have on hand. Traditional tzatziki uses fresh thyme, so feel free to add it, I just don’t keep it at the house and am fine using dried herbs. I put tzatziki on sandwiches, salads and rice bowls. It’s also great as a sauce for grilled chicken or just to serve with veggies for snacking. The best part is that the flavor gets better after it sits in the fridge for a day or two.. *leftovers*
Ingredients
- 1 cup Greek yogurt
- 1 English cucumber, diced
- 1 clove minced garlic
- 1 tbsp lemon juice
- 1 tbsp red wine vinegar
- 1/2 tsp dried oregano
- salt and pepper to taste
Directions
- Add all ingredients to a bowl and mix well.
- Let refrigerate for at least an hour, but it’s even better the next day!
I made some this Sunday and have eaten it on a Buddha bowl for dinner two nights in a row. Obsessed. Let me know if you try it out!
