Where are my smoothie fans?! I make a smoothie at least once a week. I’m excited to team up with Konsyl Fiber again to share my favorite smoothie recipe. I’ve been taking Konsyl Daily Psyllium Fiber everyday for the last seven years or so. It’s a powder fiber supplement that supports your digestive wellness that was recommended to me by my GI doctor. I typically mix Konsyl with orange juice and drink it, but on days when I make smoothies I’ll just add it in with my smoothie ingredients. You can’t taste it and it’s a great way to get more fiber in your diet! I’m always looking for ways to boost my fiber as a part of my overall wellness routine. While fiber is certainly great for digestive health, it has also been said that adequate fiber intake may benefit your digestion and reduce your risk of chronic health issues (source).

I’ve followed a carb cycling diet off and on for the past few years. I try to be conscious of net carbs (carbs minus fiber). While I love smoothies, they can be full of sugar and carbs. I started swapping out the banana in my smoothies for zucchini or cauliflower and now can’t tell the difference. The frozen veggies help create a creamy consistency and with the flavor from the berries and peanut butter powder I swear you really can’t tell that you’re drinking vegetables 😉 It will vary based on what brands you use, but according to My Fitness Pal, this smoothie recipe has 18 net carbs. If you’re unsure of veggies in a smoothie, I’d encourage you to start with a small handful of zucchini and ½ of a frozen banana. If you’re used to super sweet smoothies, you can add some stevia or honey, but I find it’s sweet enough from the berries.

I recommend steaming and then freezing your veggies to make them easier to digest. I steam my vegetables in a steamer basket and then arrange them on a cookie sheet so that none are touching each other and freeze for two hours. After they’re frozen you can store in the freezer in a ziploc or reusable silicone bag. By freezing them on the cookie sheet first you’ll prevent all the veggies from freezing together in one big block. 

Ingredients

  • 1 tbsp Konsyl Daily Psyllium Fiber
  • 1/2 cup steamed then frozen zucchini
  • 1/2 cup steamed then frozen cauliflower
  • 3/4 cup frozen berries
  • 3/4 cup unsweetened almond milk
  • 2 tbsp powdered peanut butter
  • protein powder of choice 

Ingredients

  • Add all ingredients to a blender and blend until well combined. You may need to add a touch more almond milk if it’s too thick.
  • Top with granola or fresh berries if desired.
