Spinach Feta Pinwheels

Y’all know I love a good pinwheel! I also love spanakopita, the traditional greek spinach pie made with cheese, typically feta. I wanted to do a spinach feta pinwheel inspired by this delicious treat! You take crescent roll dough sheets and fill with a tasty filling of cream cheese, feta, mozzarella, spinach and greek spices. I use Cavender’s Greek Seasoning, but you can also just use a little salt, pepper, garlic powder, oregano and parsley. The seasoning isn’t necessary, but definitely adds a little extra flavor!

If you can’t find crescent roll dough sheets, you can also use regular crescent roll dough and just pinch the seems together. The pinwheels are a little easier to slice if you freeze the dough log for 30 minutes to an hour, but it’s definitely not necessary. I also like to prep these ahead of time and keep in the freezer. If they’ve been frozen overnight or longer, just take the dough log out to thaw an hour or so before baking. The recipe calls for frozen spinach. You can either let it thaw and squeeze all the extra moisture out, or I’ll just follow the microwave cooking directions and squeeze all the moisture out from there. You could also use fresh spinach and steam it.

Ingredients

  • 2 crescent roll dough sheets

  • 8oz block cream cheese, softened

  • 1 cup shredded mozzarella cheese

  • 1 cup crumbled feta cheese

  • 8oz frozen spinach thawed with all extra moisture squeezed out

  • 2 tbsp Cavender's Greek Seasoning

Directions

  • Add spinach, cream cheese, mozzarella, feta and Cavender's to a bowl and mix until well combined

  • Spread mixture on crescent roll dough sheets and roll from the long side creating a log

  • Optional: Freeze for one hour or overnight

  • Slice dough log into pinwheels approximately 1/3 in thick

  • Place pinwheels on greased baking sheet and bake at 350 for 15-18 minutes until golden brown
