Thanksgiving is almost here! I got a request to share a sweet potato casserole recipe, and it just so happens my Aunt Marcia makes the most delicious sweet potato casserole. This might be a controversial statement, but I don’t like marshmallows on sweet potatoes. This casserole has a crunchy brown sugar streusel topping, that imho does not need any marshmallows added to it.. but feel free to throw some on there if that’s your style!
Sweet Potato Casserole
Ingredients
- 3 cups mashed sweet potatoes (about 3 medium sweet potatoes)
- 1/2 cup plus 1/3 cup melted butter
- 1/2 cup evaporated milk
- 3/4 cup white sugar
- 2 eggs
- 1 tsp vanilla
- 1 tsp cinnamon
- 1 tsp clove
- 1 tsp nutmeg
- 1 cup brown sugar
- 1/3 cup flour
- 1 cup walnuts, chopped
Directions
- Preheat oven to 375
- Add sweet potato, 1/2 cup melted butter, evaporated milk, white sugar, eggs, vanilla, cinnamon, clove and nutmeg to a large bowl and combine using a hand mixer and then spread in a greased 9×13 casserole dish
- Combine 1/3 cup melted butter, brown sugar, flour and walnuts for topping and sprinkle over the sweet potato mixture
- Bake for 30 minutes
