If you follow me on Instagram, you may have seen an over-the-top brunch I attended a while back at The Barn at Springhouse. A group of bloggers came together to plan the most extra brunch I’ve ever attended. We’re talking a full-out Pinterest set-up; pallet tables, mimosa bar, flower crown-making station and all.
Each blogger contributed a brunch dish or part of the beautiful set-up. And our spread was insane! So many yummy dishes. I made Watermelon & Feta Bites, which you can find the recipe for here and a Summer Brunch Salad filled with peaches, heirloom tomatoes, prosciutto, fresh mozzarella cheese and pine nuts. I figured we would have a lot of your traditional brunch dishes, so I wanted to bring a lighter option that showed off summer produce.
There were so many delicious options, I had to try them all! Sarah of Space, Place & Southern Grace made brunch sliders with avocado and bacon that I’m dying to recreate at home. Lisa of Candor and Rose made a mushroom tart that I have seriously craved ever since. Anna of Hartley Social made the cutest nutella pancake skewers. So much goodness! - 1 pound container power greens or mixed greens
- 3 peaches, sliced
- 1 pint heirloom cherry tomatoes, halved
- 1 ball fresh mozzarella, torn into pieces
- 4 slices prosciutto cut into two inch pieces
- 1/4 cup toasted pine nuts
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 2 tsp Dijon mustard
- 1 tsp honey
- 1 tsp minced garlic
- Salt and pepper to taste
- Add all ingredients for salad to a bowl.
- Add all ingredients for dressing into a mason jar and shake well.
- When ready to serve, pour roughly 1/2 cup of vinaigrette over salad to taste.
