September is National Family Meals Month and I’m excited to partner with IGA to share a budget-friendly family meal! Putting together a delicious, healthy meal your whole family will enjoy while not breaking the bank can be a challenge. IGA makes shopping for your your family’s needs easy. I picked up several things to craft a full menu: Baked Ranch Chicken Fingers with Hashbrown Cauliflower Casserole and Homemade Zucchini Bread.
I have a soft spot in my heart for IGA. My grandparents are from Western Kentucky and the only grocery store in their town was an IGA. We loved shopping there because they had kid-sized grocery carts my Mimi let us push around the store and we got a free cookie 😉 My cousins and I called it the “igga” and always asked to go there when we visited them! After all these years,, IGA is still producing great quality products. They actually have a double money back guarantee! When putting together this meal I was so impressed by the great value and quality of IGA’s products. Check out the recipes below!
Zucchini Bread, makes two loaves
Ingredients
- 3 cups all purpose flour
- 1 1/2 cups sugar
- 1 cup chocolate chips
- 3 large eggs
- 1/2 cup applesauce
- 1/2 cup melted coconut oil or vegetable oil
- 2 cups shredded zuchinni
- 8oz can crushed pineapple, drained
- 2 tsp vanilla extract
- 2 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp salt
- 1 1/2 tsp cinnamon
- Non-stick cooking spray
Directions
- Preheat oven to 350
- Spray two 8×4 loaf pans with non-stick cooking spray
- In medium bowl, whisk together flour, baking soda, baking powder, cinnamon and salt
- In large bowl of a stand mixer (or using hand mixer) beat eggs at a high speed until frothy
- Beat in sugar, applesauce and vanilla until mixture is thick and foamy
- Stir in zuchinni, pineapple and flour mixture
- Fold in chocolate chips
- Divide evenly in loaf pans
- Bake one hour, until toothpick comes out clean
- Let cool for 15 minutes in loaf pans, then transfer to wire rack to continue cooling
Hashbrown & Cauliflower Casserole
Ingredients
- 26oz frozen hashbrowns, thawed
- 10oz frozen cauliflower rice, thawed
- 1 onion, diced
- 16oz sour cream
- 14.5oz can diced tomatoes, drained
- 10oz can cream of chicken soup
- 3 cups shredded cheddar cheese
- IGA ranch dip seasoning packet
- 1/3 cup breadcrumbs
- 1/2 stick melted butter
- Non-stick cooking spray
Directions
- Preheat oven to 350
- Add hashbrowns, cauliflower rice, diced onion and diced tomatoes to a large mixing bowl and stir to combine
- Add cream of chicken soup, sour cream and 3/4 of the ranch dip packet and stir to combine
- Add 2 cups of the cheddar cheese and stir to combine
- Spray a 13×9 baking dish with cooking spray and spread hashbrown mixture evenly in dish
- Top with remaining cheddar cheese
- Mix together melted butter, remaining ranch dip packet and breadcrumbs and stir to combine
- Top casserole with breadcrumb mixture
- Bake for 30-35 minutes until cheese starts to bubble and breadcrumbs are golden brown
Baked Ranch Chicken Tenders
Ingredients
- 1 1/2 pounds chicken breast tenderloins
- 1/2 cup mayo
- 2 eggs
- 2 tbsp water
- IGA ranch dip seasoning packet
- 1 cup breadcrumbs
- 1/3 cup flour
- 1/2 tsp salt
- 1/4 tsp pepper
- Non-stick cooking spray
Directions
- Preheat oven to 400
- Add eggs, mayo and water to a small bowl and whisk to combine
- Add flour, salt and pepper to a small bowl and whisk to combine
- Add breadcrumbs and ranch dip seasoning to a small bowl and stir to combine
- One at a time, dredge chicken tenders in flour, then egg mixture, then breadcrumb mixture, making sure to coat all sides
- Place chicken tenders on a wire rack on a baking tray*
- Spray chicken tenders with cooking spray
- Bake for 15 minutes until chicken reaches an internal temperature of 165 degrees
*If you don’t have a wire rack, you can bake on a cookie sheet, just spray sheet with cooking spray first and flip chicken tenders half way through baking
