Y’all know I am the chicken salad queen. I have a Lexington Chicken Salad Guide and this Kroger Deli Chicken Salad copy cat recipe is the most popular recipe on my blog. I make a batch probably every other week. Screamin Mimi’s sent me some of their hot pepper sauce a few weeks ago and I ended up using it in chicken salad for a buffalo variety and loved it! If you’re not into spice, you can adjust how much you add to your liking.
The secret to the best chicken salad is using a stand mixer. It is the best way to shred chicken, trust me! But if you don’t have a stand mixer you can also use a hand mixer or just shred your chicken with two forks. Also in case you missed it the other day, I shared this veggie chopper which has changed my life and is great for chopping onion. Just a note on the salt in this recipe, the amount you want will depend on how seasoned your chicken is. If your chicken is really salty, you’ll need less.
Buffalo Chicken Salad, serves 4-5
Ingredients
- 1 pound roasted chicken breast
- 1/2 cup plain greek yogurt, or mayo, or 1/4 cup of each
- 2-3 tbsp buffalo or hot sauce (to taste)
- 2 stalks celery, diced
- 1/4 cup white onion, minced
- 1/2 tsp salt (to taste)
Directions
- Add chicken breast to stand mixer and turn on low until chicken is shredded
- Add greek yogurt, buffalo sauce and salt to chicken and mix until combined
- Add celery and onion and mix until combined
