Cauliflower Power Smoothie

Yup, I said cauliflower + smoothie. You may have noticed this recent health craze. Everyone has been on the green smoothie train for years now, but even though you’re getting nutrients from the spinach and fruit, if you load your smoothies with fruit, you end up eating a lot of sugar. To counterbalance that, people have started to put more frozen veggies in smoothies, like cauliflower, broccoli or even sweet potato.

I was a little skeptical at first, but will eat anything, so I tried swapping out half a cup of frozen cauliflower for what I would normally use fruit in a smoothie and was pleasantly surprised! I honestly couldn’t taste the difference. I even tested it out on my boyfriend by giving him a taste without telling him what I put in there and he thought it was just a fruit smoothie.

I usually add Vital Proteins Collagen Peptides, which I talked the health benefits of in a previous post here, and Hemp Hearts to my smoothies to extra health-ify them. Collagen Peptides are good for gut health, hydration, reducing inflammation and help with wrinkle prevention. Hemp Hearts contain protein and have all 10 essential amino acids. I also add some ginger and lemon juice, which are good for digestion.

Ingredients

  • 1/2 frozen banana
  • 1/2 cup previously steamed then frozen cauliflower
  • 1/3 cup frozen blueberries
  • 1 handful spinach
  • 1/2 tsp minced ginger
  • 1 tsp lemon juice
  • 1 scoop Vital Proteins Collagen Peptides
  • 1 tbsp hemp hearts

Directions

  1. Add all ingredients to blender and blend, blend, blend. It will probably take around two minutes depending on your blender. I use this little Magic Bullet that’s the perfect size for one smoothie (and only $40 on Amazon)

And there’s breakfast (or snack, or dessert)! Another idea, sometimes I switch out a tablespoon of almond butter for the spinach to make a kind of PB&J smoothie. Yum. Y’all give it a try and let me know what ya think!
