If y’all haven’t tried my mini sour cream muffins, you’ve been missing out. They are a family favorite that we serve with chili, soup, BBQ, at cookouts.. with just about anything. They are so easy and addictive, you just keep popping them in your mouth! I’ve been wanting to make a cheesy version for years and after some experimenting, found adding a cup of shredded cheddar cheese makes for a delicious muffin!
There is a BBQ chain called Jim ‘N Nicks that I loved in college. They serve these mini cheese biscuits that I think about from time to time that I’ve always wanted to recreate. Their biscuits are a little sweet, so I added some sugar to the sour cream muffins to emulate them. Now, sugar makes everything taste better, so keep that in mind.. but, I don’t think these need the extra sweetness. I’ve made them both ways and they’re great either way. I’ll probably make them without the sugar moving forward, but try it out and see what you think! Also try serving these with honey butter.. so good. I just added 2 tbsp honey to half a stick of butter.
Cheesy Mini Sour Cream Muffins, makes 3 dozen mini muffins
Ingredients
- 1 stick salted butter, melted
- 1 cup sour cream
- 1 cup self rising flour
- 1/4 cup sugar (optional)
- 1 cup shredded cheddar cheese
Directions
- Preheat oven to 375. Grease mini muffin tins.
- Combine melted butter, sour cream, flour and sugar if desired. Add shredded cheddar and mix to combine.
- Fill mini muffin tins with roughly one heaping tbsp each.
- Bake for 15-18 minutes until muffins just begin to brown.
- Let cool for a few minutes and serve!
