I was feeling a little uninspired, so I polled Instagram stories for recipe requests, specifically what are your favorite restaurant dishes you want to recreate at home? A couple people said Chuy’s Creamy Jalapeño Cilantro Dip and I knew I had to attempt it! I’m obsessed with the stuff. I wanted to try and make it “healthyish” so I used avocado mayo and nonfat Greek yogurt. It ended up so good! I’ve been eating it all week.. on tacos, fresh cut veggies and chips. I tried this dip with and without the buttermilk, and I personally preferred it without. It ends up being a bit thicker than it usually is in the restaurant, so if you want it more authentic, add the buttermilk. PS: you can make buttermilk at home, just add a tablespoon of lemon juice or white vinegar to a measuring glass and then fill it to the cup line with milk. Stir and let sit for five minutes, and you’ve got buttermilk!
Copy-Cat Chuy’s Creamy Jalapeño Cilantro Dip
Ingredients
- 1/2 cup avocado mayo
- 1/2 cup plain Greek yogurt
- 1/2 cup pickled jalapeños, plus 1 tbsp juice from the jar
- 1 small bunch cilantro leaves, about 1 cup packed
- 1 packet ranch dressing seasoning mix
- 1/2 tsp salt
- 1/3 cup buttermilk (optional)
Directions
- Add all ingredients to a food processor and pulse until fully combined.
