So I actually used to hate pickles! As a kid, even if pickle juice got on the bread of my sandwich I couldn’t stand the taste. Somehow I eventually warmed up to the flavor and now really like pickles. I saw an Instagram video of someone making a dip with chopped pickle and ham, and came up with the idea to make a ranch dip using diced pickles. I love Drake’s fried pickles served with ambrosia ranch! It’s a great combination of creamy and tangy flavors.
This recipe is also so easy. You can literally throw all ingredients in a food processor and be done in 3 minutes. If you don’t have a food processor, no worries. Just finely dice your pickles and you can easily mix the dip together with a spatula. Serve with fresh veggies, chips or pretzels. I’ve been spreading the leftovers on deli turkey for a low carb snack, so good!
