Y’all. I may have outdone myself with this one. It’s basically a grilled cheese waffle, so I mean how could it not be delicious? I’ve been trying to dine out less in the new year to both try and eat better and save a little money. But y’all know I love my brunches! I decided to take an indulgent brunch dish, the Monte Cristo, and recreate it at home into something a little more approachable. Instead of making french toast, I used Kellogg’s® Eggo Nutri-Grain Blueberry Waffles 10 Ct for an at-home spin on the Monte Cristo. Pile on deli ham, Swiss cheese and raspberry fruit spread, which has less sugar than jam, to make the perfect combination of savory and sweet.
Eggo Nutri-Grain Waffles have eight grams of whole wheat, are a good source of fiber, and now have colors and flavors from natural sources. When I don’t have time for a leisurely brunch I like to top them with peanut butter, banana and chia seeds for a filling breakfast or snack on the go. Find them in the frozen foods section at Walmart or shop online with Walmart’s grocery pick-up service by hovering over the photo below.
recipe makes one sandwich
Ingredients
- 2 Eggo Nutri-Grain Blueberry Waffles
- 2 slices of deli ham
- 2 oz shredded Swiss cheese
- 1 tbsp raspberry fruit spread
- 1 tbsp butter
- powdered sugar (optional)
Directions
- Make waffles according to instructions on box
- Spread raspberry fruit spread on each of the waffles
- Sprinkle half of the swiss cheese on one of the waffles
- Place ham on top of the cheese
- Sprinkle the remaining cheese on top of the ham and top with remaining waffle
- Heat a nonstick pan over medium heat and melt butter in pan
- Cook waffle sandwich for about one minute per side until cheese melts
- Sprinkle waffle sandwich with powdered sugar if desired
I used Walmart’s Online Grocery Pickup Service to snag the ingredients to make this dish – I love how convenient it is! Just pull up to the designated parking spots, call the number listed and you will be greeted by an associate within a few minutes. They bring your groceries right out to your car and go over the order with you before loading the groceries in your trunk. You seriously don’t even have to get out of the car! I use one waffle toasted top with sausage or bacon and a fried egg with cheddar cheese sprinkled on top broil in toaster oven til cheese melts (wonderful low carb)
