Hi friends! I’m back with another recipe in partnership with al fresco chicken sausage. al fresco challenged me to come up with a recipe using only five ingredients. With the weather changing, I thought of a comforting soup. This Tomato Basil Tortellini Soup is surprisingly full of flavor for so few ingredients.
I know I’ve sung my praises of chicken sausage here before. al fresco’s product is fully-cooked, so you can quickly heat it up. It’s a staple ingredient in my fridge for an easy weeknight dinner on the fly.
Tomato Basil Tortellini Soup, serves four
Ingredients
- 2 al fresco Sweet Italian Chicken Sausages, sliced 1/3 in thick
- 2 tbsp olive oil
- 1/2 onion, diced
- 4 cups chicken broth
- 10oz fresh cheese tortellini
- 1 1/2 cups tomato basil marinara
Directions
- Heat olive oil over medium heat
- Add onion and cook 3-5 minutes until soft
- Turn to medium-high, add chicken sausage cook for 5 minutes until chicken sausage starts to brown
- Add chicken broth and bring to a boil
- Add tortellini and boil for 3 minutes
- Turn to medium low, add marina and stir to combine
- Let simmer for 3 minutes and then serve
