Mandarin Orange Rainbow Ramen Salad.. that’s a mouthful! But also delicious. I make a ramen noodle picnic coleslaw with broccoli slaw that is always a huge hit. I wanted to try a more colorful version by using purple cabbage, cole slaw mix, peppers and mandarin oranges. The ramen noodles and sliced almonds give the salad some crunch. It’s the perfect combo of flavor and texture!
This is a great recipe for a big group. I’ve brought it to a few family cookouts recently and it was a big hit. If you’re wanting to prep ahead of time you can make the dressing in a mason jar and keep that and the ramen noodles separate and just toss them together before you’re ready to serve. I try and add the dressing 20-30 minutes ahead of time so the flavors have time to meld together.
Mandarin Orange Rainbow Ramen Salad, feeds 8-12
Ingredients
- 4 cups shredded red cabbage
- 4 cups coleslaw mix
- 1 red bell pepper, diced
- 5 scallions, diced
- 2 10.5oz cans mandarin oranges, drained
- 1/3 cup sliced almonds
- 1 package ramen noodles (broken up) and seasoning packet
- 1/4 cup olive oil
- 3 tbsp rice wine vinegar
- 2 tbsp soy sauce or coconut aminos
- 1 tbsp sesame oil
- 1 tbsp honey
Directions
- Make dressing by whisking together olive oil, rice wine vinegar, soy sauce, sesame oil, honey and ramen seasoning packet
- Combine all other ingredients and toss in dressing
- If you are preparing this ahead of time, wait to add the ramen noodles and dressing until 20 minutes before you’re ready to serve
