I’m sure I’m not alone in this, but I’m obsessed with caprese salad in the summer. My first job in high school was at The Mousetrap, a local deli and speciality food store. They make the most delicious caprese salad with mango. I love the extra sweetness it adds to this traditional summer salad! I recreated it at home and loved the result. It’s also a really pretty dish for entertaining.
Mango Caprese Salad, serves four
Ingredients
- 1-2 heirloom tomatoes, sliced
- 1 mango, diced
- 1 ball mozzarella, torn into pieces
- 2 large handfuls spring mix
- small bunch fresh basil, sliced into 1/8 in strips
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp honey (optional)
Directions
- Make vinaigrette by whisking together olive oil, balsamic, salt, pepper and honey if using
- Toss spring mix with vinaigrette, reserve a little to drizzle on top
- Top with tomatoes, mango, mozzarella and basil, then drizzle with remaining vinaigrette
