Y’all know about sausage balls. don’t you?! A classic southern appetizer made with Bisquick baking mix, sausage and cheese. I wanted to do a riff on them, and thought, why not make pimento cheese sausage balls! Still the classic appetizer you love, just kicked up a bit. My very first job was at The Mousetrap in Lexington, known for their pimento cheese. It’s a secret recipe that I never actually saw written down, but I know a few of the ingredients so may have been a little influenced 😉Â
I use Italian sausage in this recipe because I think it gives a little extra flavor, but regular breakfast sausage is fine too. Otherwise you just need some sharp cheddar cheese, pimentos, baking mix and spices. If you don’t have instant baking mix on hand, you can make your own following this recipe.
This would also be a great recipe to make ahead and freeze. You can freeze the pimento cheese sausage balls unbaked and just let them thaw before baking. Or freeze them baked and heat up in the oven to serve.
Pimento Cheese Sausage Balls

1 lb Italian ground sausage
2 cups shredded cheddar cheese
2 cups instant baking mix
4 oz diced pimentos, drained
2 tsp garlic powder
1 tsp salt
1 tsp pepper
1 tsp paprika
Directions
Preheat oven to 350.
Combine all ingredients in a large mixing bowl and mix with your hands until well combined. You can use a wooden spoon, but your hands are easier!
Roll mixture into balls slightly smaller than a golf ball.
Bake on a greased baking sheet for 20-25 minutes until golden brown.
