I polled my Instagram audience on what kind of recipes they were craving, and got a few requests for easy veggie + protein bowls or sheet pan meals. I keep a running recipe ideas note in my phone and had written down shrimp and pineapple bowls a few months ago, so this seemed like the perfect time to try something new! These bowls are so easy. The pineapple and veggies roast on one pan while you marinate your shrimp in teriyaki sauce. I’ve also used this Primal Kitchen Hawaiian BBQ Sauce which was so good and is paleo! Throw the shrimp on the same pan and cook for a few more minutes while you microwave your rice. And ta da! Dinner in 25 minutes. This is also a great meal prep item – you can chop all your veggies/pineapple ahead of time and mix up the sauce in a mason jar.
Pineapple Shrimp Sheet Pan Bowls, serves 2
Ingredients
- 6oz raw shrimp, peeled & deveined
- 2 cups pineapple, chopped into 1in cubes
- 1 bell pepper, chopped into 1in pieces
- Small head of broccoli florets
- 2 cups cooked rice (I use microwave rice packets)
- 1/3 cup teriyaki/Hawaiian bbq sauce
- 3 tbsp olive oil,
- 2 tbsp coconut aminos or soy sauce
- 1 tsp coconut sugar
- 1/2 tsp garlic powder
- 1/2 tsp ground ginger
Directions
- Preheat oven to 400
- Add all olive oil, coconut aminos, coconut sugar, garlic powder and ground ginger to a bowl and whisk to combine
- Add pineapple, red pepper and broccoli to the mixture and toss to coat
- Spread veggie mixture on a large sheet pan and place in the oven to cook for 20 minutes
- Toss shrimp with teriyaki sauce
- After the veggies have cooked for 20 minutes, remove from oven and add shrimp to pan
- Return and cook 4-5 minutes until shrimp are pink
- Make your bowls by layering rice with veggie mixture and shrimp, drizzle with more teriyaki sauce if desired
