Y’all know I love a sausage and cheddar combo… my Sausage Pinwheels and Cheesy Sausage Squares are two of the most popular recipes on my site! I wanted a brunchy recipe that would also be good for tailgating and came up with these Sausage Cheddar Mini Muffins. They use instant baking mix (I use Bisquick) so they’re super simple. Fold in ground sausage and cheddar cheese for the ultimate mini muffin bite! These muffins are so easy and could even be prepped the day before and baked the morning of. They’re also great on the side of soup.
Sausage Cheddar Mini Muffins

1/2 lb breakfast sausage, browned
1 cup shredded cheddar cheese
2 cups instant baking mix
1 egg
2/3 cup milk
2 tbsp olive oil
1 tsp garlic powder
Directions
Whisk together baking mix, milk, egg, olive oil and garlic powder until no lumps remain
Fold in cooked sausage and shredded cheese just until combined
Spoon in greased mini muffin tins and bake at 350 for 12-15 minutes until golden brown.
