Y’all…. I can’t get over these s’mores bars. Take everything you love about a s’mores and turn it into an easy to eat cookie bar. They are gooey and chewy and chocolatey, and well, s’mores-y. So. Dang. Good. I took my favorite chocolate chip cookie recipe and swapped some of the flour for graham cracker crumbs to make a cookie bar base. Layer that with marshmallow fluff and chocolate chips and you’ve got the most delicious dessert bar ever. I use dark chocolate chips, but you could use milk, semi-sweet or even chocolate bars if you prefer.
S’mores Bars
Ingredients
- 1 cup of unsalted butter, softened
- 2 eggs
- 1 cup brown sugar
- 1/2 cup white sugar
- 1 tsp vanilla
- 1 1/2 cup all purpose flour
- 1 cup graham cracker crumbs
- 1 tsp baking soda
- 1 tsp cornstarch
- 3/4 tsp salt
- 8oz marshmallow fluff
- 2 cups dark chocolate chips
Directions
- Preheat oven to 350.
- Add flour, graham cracker crumbs, baking soda, cornstarch and salt to a mixing bowl and whisk to combine.
- Add softened butter and sugars to a stand mixer with the paddle attachment and cream on medium-high for about two minutes. Add eggs and vanilla and beat until combined.
- Add flour mixture to the bowl about one cup at a time, beating on medium speed until combined.
- Grease an 11×7 baking dish and spread a little more than half of the dough on the pan, using your hands if needed. Spread the marshmallow fluff on top, then sprinkle chocolate chips over evenly. Spread the remaining dough on top.
- Bake for 30-40 minutes. I find they need 40, but have gotten some feedback that it only took 30 for others. Everyone’s oven is different, so I would set your timer for 30 then check!
- Let rest for at least an hour before slicing.
