I’ve got the perfect summer salad for y’all! If I’m being honest, my stomach does not always love corn, but I love it so much, so I try and eat it sparingly. I got a bunch of corn in my Teal Tractor CSA box this past week (read about my CSA here) and couldn’t resist making something with it. It was the first time I’ve had corn this summer and y’all, it was so good I ended up eating this salad out of the mixing bowl standing over my kitchen sink. Zero shame.
I also got the most beautiful cherry tomatoes in my share box, so I combined those with the fresh corn, some feta, fresh basil from my urban herb garden, and whipped up a red wine vinaigrette. The salad is even better if you let it sit over night and let the flavors meld together – aka the perfect potluck recipe.
Ingredients
- 6 ears of corn, cut off the cob
- 1 pint cherry tomatoes, halved
- 4oz feta crumbles
- 1 handful fresh basil (15-20 leaves) cut into thin strips
- 1/4 cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 1 tsp salt
- 1/8 tsp pepper
Directions
- Add corn, tomatoes, feta and basil into a large mixing bowl and stir to combine
- Add vinegar, salt and pepper in a small bowl and whisk to combine
- Slowly pour in olive oil while whisking to make vinaigrette
- Add vinaigrette to corn mixture and stir to combine
- Serve or store in an airtight container in fridge overnight
