It’s chili season! There’s nothing better than a Sunday night with a pot of chili on the stove, the fire going and a great movie. Harry Potter preferably. Dave and I have done that the past few weekends while I’ve been perfecting this Turkey Enchilada Chili recipe for you! It’s like a traditional chili, but with a little kick from enchilada sauce. I use ground turkey, but you could also use ground chicken or beef. If you do beef you may want to drain any excess grease from the pan before adding in the canned beans etc. I recommend topping with sour cream, cheese and tortilla chips so it’s kind of like nachos in a bowl!
Turkey Enchilada Chili, serves 4-5
Ingredients
- 1 lb ground turkey
- 1 15oz can black beans (with liquid, do not drain)
- 1 15oz can diced tomatoes (with liquid, do not drain)
- 1 10oz can enchilada sauce
- 1 packet chili seasoning mix
- 1/2 white onion, diced
- 1 bell pepper, diced
- 1 tbsp olive oil
Directions
- Heat olive oil in a large pot or dutch oven over medium heat
- Add onions to pan and cook until they start to yellow, 5-7 minutes
- Add bell pepper and cook until soft, 2-3 minutes
- Add ground turkey and half of the chili seasoning and brown, 5 minutes
- Add black beans, diced tomatoes, enchilada sauce and remaining chili seasoning to the pot, stir and bring to a boil
- Cover and reduce heat to low, let cook for 15-20 minutes
- Serve with desired toppings like cheese, sour cream, avocado and tortilla chips
Who’s ready to make a big pot?! This is the perfect recipe for a football Saturday or Sunday. I recommend pairing with Three Ingredient Sour Cream Muffins or Four Ingredient Beer Bread.
