White Chocolate Cranberry Cookies

Y’all may remember I shared the recipe for THE BEST chocolate chip cookies a while back. They are chewy and just so delicious. I went to a holiday shindig with a group of Kentucky bloggers last week and needed to bring a dish, so decided to try a more holiday-ish version of these cookies. I  swapped out white chocolate chips and dried cranberries for the chocolate chips and loved how they turned out! Check out the recipe and photos from the event below.

Ingredients

  • 1 cup unsalted butter, softened (not melted)
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 egg plus 1 egg yolk (at room temperature)
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp corn starch
  • 1/4 tsp cinnamon
  • 3/4 tsp salt
  • 1/3 cup dried cranberries
  • 1/2 cup white chocolate chips

Instructions

  • Add softened butter, brown sugar, sugar, egg and egg yolk and vanilla to stand mixer and mix on medium-low until combined
  • Add flour, baking soda, corn starch, cinnamon and salt to a mixing bowl and whisk until combined
  • Add approximately 1/2 cup of the flour mixture to the wet ingredients at a time mixing on medium-low speed until just combined
  • Fold in white chocolate chips and dried cranberries
  • Cover dough and refrigerate for at least two hours or overnight
    Preheat oven to 365
  • Grease a cookie sheet or use a silicone baking mat – this two pack from Amazon is what I use and only $8.38!
  • Roll cookie dough into balls roughly the size of a golf ball and place on cookie sheet two inches apart from each other
  • Bake for 10-12 minutes until edge of cookies start to brown, but are still a little undercooked in the center (cookies will continue to bake once you take them out of the oven)

There was a lot of other delish food at the event and allll the holiday spirit. About 15 local bloggers gathered at Jeptha Creed Distillery and each of us contributed something for the get together. Maya of Pugs and Paprika made Parmesan Sausage Cups, Sam of Sam and Nate Blog made Pine Wreath Gift Tags for our goodie bags, and so much more Pinterest-worthy decor.

A big thanks to Barrel Down South, Drake’s, Mirabelle Creations and Work the Metal for providing items for our gift bags. Hillenmeyer Christmas Shop provided the greenery, Lexington Lettering provided signage and Jenfolio photographed the event. And of course, a huge thanks to Jeptha Creed for hosting us! Each of the bloggers who attended are posting about their contribution to the event. Check out the links below for lots of holiday inspiration!
