I honestly can’t believe it’s already Super Bowl time! I’ve been thinking about recipes for a few weeks and this idea just came to me. You know Sausage Balls, the appetizer made with ground sausage, cheese and Bisquick baking mix? I had the idea to do a buffalo chicken version! Buffalo Chicken Balls are basically the same, but with your favorite buffalo flavor. These come together easily in a stand mixer, but you can also mix them by hand.
Buffalo Chicken Balls
makes 75-80 mini balls
Ingredients
- 1 lb ground chicken
- 16 oz shredded cheddar cheese
- 2/3 cup buffalo sauce
- 3 cups Bisquick
Directions
- Preheat oven to 350.
- Add all ingredients to a stand mixer and mix on medium-low speed until combined. You can also use a hand mixer. If you don’t have either you can mix with a wooden spoon and then work the ingredients together with your hands.
- Shape into small balls, about 1 1/2 in wide, and place on a lined baking sheet. I use these AmazonBasics Silicone Baking Mats ($13.99 for two). They are a game changer, no pan to clean up! It can get a bit messy when forming the balls, so feel free to flour your hands or use a cookie scoop.
- Bake for 25-30 minutes until golden brown.
- Serve with ranch or blue cheese.
