Whipped Feta Dip

I know I always say I have an easy recipe for you, but this one is seriously so easy. You literally just put all the ingredients into a food processor and press a button and voila, you have a delicious feta dip. If you don’t have a food processor you could also use a blender or hand mixer. I’ve made this for a few football games and it’s been a big hit. Serve with pita chips, fresh veggies or even tortilla chips. I’ve also spread the leftovers on a turkey sandwich and it’s delicious 🙂

Ingredients

  • 10oz feta
  • 8oz block cream cheese
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp minced garlic
  • 1/2 tsp dried parsley
  • 1/2 tsp dried basil
  • 1 cup cherry tomatoes
  • optional diced cucumber

Directions

  1. Add all ingredients except for cherry tomatoes and cucumber to a food processor. Add about 1/2 of the cherry tomatoes to the food processor and reserve other half.
  2. Process until well combined and creamy. There will still be small chunks of feta.
  3. Pour into bowl to serve. Drizzle feta dip with a little additional olive oil and top with diced cherry tomato and cucumber if desired.
