Chai Energy Bites with Bigelow Tea

Happy October y’all! I am ready to bust out my sweaters and curl up on the couch with a cup of tea. I fell in love with the ritual of tea when I studied abroad in Oxford, England. We had tea with breakfast, after dinner, and there were even tea kettles in our dorm rooms. I love how tea can be a social experience or a time to just take a moment for yourself throughout the work day. Drinking tea has become an essential part of my routine; I drink green tea every morning to start my day, earl grey as an afternoon pick me up and decaf to relax when I get in bed at night. I’m excited to partner with Bigelow Tea on this post to share a fall recipe that perfectly pairs with their Vanilla Chai Black Tea, available at Walmart. I love the warming fall flavors and have turned to this tea lately for a moment of calm in the midst of my crazy work schedule and trying to plan a wedding on top of all the fun fall activities.

These Chai Energy Bites compliment the flavors of Bigelow Vanilla Chai Black Tea by incorporating chai spices and nutty almond butter. This recipe is gluten, dairy and refined-sugar free. It’s the perfect treat that feels like an indulgence, but is really a guilt-free boost of energy! Pair it with a cup of Bigelow Vanilla Chai Black Tea the next time you need a little pick me up. Check out the recipe below. 

Ingredients

  • 1 cup old-fashioned oats (gluten free if desired)
  • 1/2 cup shredded coconut (unsweetened if desired)
  • 3 tbsp hemp hearts
  • 1 1/2 tbsp chai spice (see below)
  • 1/2 cup creamy almond butter
  • 1/4 cup honey

Chai Spice

  • 2 tsp cinnamon
  • 2 tsp cardamom
  • 2 tsp cloves
  • 1 tsp coriander
  • 1 tsp ginger
  • dash of salt and pepper

Directions

  1. Add all ingredients for chai spice to a small bowl and whisk to combine. Set aside.
  2. Add oats, shredded coconut, hemp hearts, and 1 1/2 tbsp of the chai spice to a large bowl and whisk to combine. *If you like a stronger chai flavor, add 2 tbsp of the chai spice.
  3. Add almond butter and honey to the oat mixture and use your hands to knead to combine until a dough ball forms.
  4. Roll dough into balls the size of a golf ball.
  5. Store in an air-tight container in the fridge and enjoy for a pick-me-up whenever you need it!
