Cheesy Mini Biscuit Bombs

Y’all are going to loveeeee these! I actually shared a similar recipe on Instagram last year and have been meaning to get this on the blog ever since, since it definitely deserves a permanent home. These “biscuit bombs” are mini biscuit bites filled with what is essentially rotel dip – cheese, sausage and rotel tomatoes. It’s the perfect tailgate or party food because it’s personal sized and you don’t have to worry about trying to keep dip hot/not congeal at the stadium! 

Cheesy Mini Biscuit Bombs on Lex Eats

You take the biscuits and peel them apart to break into three or four pieces. That’s why you have to get the flaky layers biscuits, they pull apart very easily. I’m sure you could slice regular biscuit dough into thin pieces, but I have not tried it. I typically use two tubes of biscuit dough and am left with three or four biscuits.. a perfect treat for breakfast the next morning 😉

Cheesy Mini Biscuit Bombs, makes 48

Ingredients

  • 2 tubes flakey layers biscuits
  • 1 lb ground sausage
  • 1/2 lb velveeta
  • 1 cup shredded cheddar cheese
  • 10oz can rotel tomatoes, drained

Directions

  1. Preheat oven to 375. Grease mini muffin tin.
  2. Brown ground sausage over medium high heat. Drain sausage and return to medium heat.
  3. Add cheese and tomatoes and stir until well combined. Cook for 3-5 minutes until thickened.
  4. Take biscuit and pull apart layers, you should get 3-4 pieces per biscuit.
  5. Place biscuit layers inside mini muffin tin, making a cup shape.
  6. Fill with cheese mixture.
  7. Bake for 12-15 minutes until biscuits begin to brown.
