Hi friends! I’ve got another delicious recipe for you in partnership with al fresco. Y’all know I’m a huge fan of chicken sausage. al fresco’s product is fully-cooked, so you can quickly heat it up, or throw it on the grill, for an easy dinner. I always keep a package in the fridge for a healthy on-hand dinner on the fly.
Growing up we had a neighborhood picnic every year. One neighbor always grilled sausages and served them on pitas. I looked forward to them every summer and decided to replicate them with al fresco’s sweet apple chicken sausage. The sweet, but savory sausage is complemented by a creamy basil sauce. The chicken sausage and veggies cook on the grill in ten minutes. If you don’t have a grill basket for the veggies, you can cook them in a foil packet on the grill. If you don’t have a grill, you can use a grill pan or just saute the chicken and veggies.
Chicken Sausage Pitas, serves 4
Ingredients
- 4 al fresco Sweet Apple Chicken Sausages
- 4 pitas
- 2 bell peppers, sliced into 1/2 in strips
- 1/2 medium onion, sliced
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
- feta cheese
- spring mix
- 1/4 cup Greek yogurt*
- 1/4 cup sour cream*
- 1/2 cup fresh basil
- 1 tbsp lemon juice
- 1 clove garlic
- 1/2 tsp salt
*You can also use all Greek yogurt or sour cream instead of half and half.
Directions
- Heat grill to medium.
- Toss peppers and onions with 1 tbsp olive oil, 1/2 tsp salt and 1/4 tsp pepper and add to a grill basket.
- Add sausages and grill basket of vegetables to the grill. Grill for 10 minutes, flipping sausages half way through.
- Make basil sauce by adding yogurt, sour cream, basil, lemon juice, garlic and 1/2 tsp of salt to a food processor. Process for 1-2 minutes until basil is completely combined.
- Slice chicken sausage on a diagonal to assemble.
- Assemble pitas starting with handful of spring mix on a pita. Top with chicken sausage, peppers and onions, a drizzle of basil sauce and sprinkle of feta.
