Week Night Pasta with al fresco

Y’all know I’m all about an easy weeknight dinner. I’m excited to partner with al fresco to share this twenty minute recipe featuring their Pasta Night Mild Italian Style Chicken Sausage. I know I’ve sung the praises of chicken sausage on here before, but I seriously always have some in my fridge for dinners in a pinch. Al fresco’s version is fully cooked, so it’s easy to quickly heat up on the stove, grill or in the microwave. It’s made with Italian herbs and red and green peppers, making it a delicious addition any pasta dish. I threw it in with some broccoli and cherry tomatoes to make a hearty weeknight meal. The cherry tomatoes break down and when combined with minced garlic and herb paste make a delicious sauce to coat your gnocchi and chicken sausage.

Ingredients

  • two al fresco Pasta Night Mild Italian Style Chicken Sausage, sliced 1/3 in thick
  • one 16oz package gnocchi
  • pint cherry tomatoes
  • one head broccoli, about four cups of florets
  • 1/3 cup Parmesan cheese
  • 3 tbsp olive oil
  • 2 tsp minced garlic
  • 2 tbsp herb paste
  • 1 tsp salt
  • 1/2 tsp pepper

Directions

  1. Heat olive oil in a large saute pan over medium heat
  2. Add chicken sausage, tomatoes, broccoli, salt and pepper and stir to combine
  3. Saute for 15 minutes stirring every few minutes
  4. Cook gnocchi according to package
  5. Add minced garlic and herb paste to chicken sausage mixture and stir to combine
  6. Drain gnocchi and add to chicken sausage with the Parmesan and stir until combined
  7. Serve with additional Parmesan if desired

Who’s ready to dig in?! I recommend keeping a pack of chicken sausage in the fridge so you can pull off an easy meal like this last minute.
