Coca-Cola Pork Tenderloin Sliders with the IGA

It’s tailgate time, y’all! I’m so excited for football season to start again, mostly because game day food is my favorite. I’m excited to team up with IGA again to share a recipe you’re going to love for tailgating, but is also a great grilling recipe for any occasion! We’re making Coca-Cola Pork Tenderloin Sliders. There is a homemade Coca-Cola BBQ Sauce, which is so much easier to make than you think! You just dump all the ingredients in a pot and let it simmer. The pork tenderloin is marinated in a sweet and tangy Coca-Cola marinade. Slice up the grilled pork tenderloin and layer it on sliders with BBQ sauce and coleslaw. If you’re not up for making your own sauce, you can use store bought. You’re going to want to try this sauce though! If you’d prefer not to grill, you can cook your pork in the oven. Just sear each side then bake at 400 for 20-25 minutes.

I have a very nostalgic tie to the IGA. My grandparents are from Western Kentucky and the only grocery store in their small town was an IGA. I have fond memories from my childhood of my Mimi taking us to the IGA and letting each cousin push their own kid-sized grocery cart around the store. Plus they gave out free cookies 😉 My cousins and I called it the “igga” and always asked to go there when we visited our grandparents. I also love that the IGA gives local people the opportunity and support to own a small business. Coca-Cola BBQ Sauce

Ingredients

  • 8oz Coca-Cola
  • 1 cup ketchup
  • 1/3 cup Worcestershire sauce
  • 1 tbsp lemon juice
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Directions

  1. Add all ingredients to a sauce pan over low heat.
  2. Bring to a simmer and let cook 20-25 minutes until thickened, stirring occasionally. 

Coca-Cola Pork Tenderloin Sliders

Ingredients

  • 1lb pork tenderloin (two tenderloins, roughly 1/2 pound each), trimmed of silver skin and any excess fat
  • 8oz Coca-Cola
  • 2 tbsp Worcestershire sauce
  • 2 tbsp lemon juice
  • 3 cloves minced garlic
  • 1/4 cup brown sugar
  • 1 tsp pepper
  • 1 tsp onion powder
  • Hawaiian rolls
  • Coleslaw
  • Coca-Cola BBQ Sauce (or store bought sauce)

Directions

  1. Add Coca-Cola, Worcestershire, lemon juice, garlic, brown sugar, pepper and onion powder to a bowl and whisk to combine.
  2. Add the marinade to a gallon bag with the pork tenderloin and place in the fridge inside a bowl so that the pork is fully submerged in the marinade. Let marinate 2 hours minimum, up to 24 hours.
  3. Remove pork from fridge and preheat grill to medium heat. 
  4. Let grill 2.5 minutes per side.
  5. Baste pork with BBQ sauce and grill 10-15 minutes more, basting every 5 minutes, until pork reaches 145 degrees.
  6. Let rest 3-5 minutes, then slice pork for sandwiches.
  7. Build sandwiches by layering Hawaiian rolls with BBQ sauce, pork and slaw, or let guests build them themselves!
