Creamy Balsamic Pasta Salad

I love pasta salad. Like all kinds of pasta salad, even the make it from a box with those weird fake bacon bits. As soon as Memorial Day weekend hits, I need some pasta salad. The really sad thing is that Dave says he doesn’t like “cold” pasta, so he won’t eat it. So I ended up making a bunch of pasta salad just for myself this past weekend 😂 I wanted a creamy balsamic vinaigrette, so I played around with my go to vinaigrette recipe and added some greek yogurt for a creamier consistency. 

The best thing about pasta salad is that you can use whatever toppings you have on hand! Swap the feta for mozzarella or parmesan. Add bacon or salami instead of pepperoni. Not a fan of olives? Use artichoke hearts or roasted red peppers. And throw in whatever veggies you have at home! This is a great way to use up cherry tomatoes, cucumbers, peppers, or even squash. Creamy Balsamic Pasta Salad, serves 6-8

Ingredients

  • 8oz rotini pasta
  • 1/3 cup balsamic vinegar
  • 1/3 cup olive oil
  • 3 tbsp greek yogurt or mayo
  • 1 tbsp dijon mustard
  • 1 tbsp honey
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 8oz feta cheese
  • 4oz pepperoni, diced
  • 1/3 cup sundried tomatoes, minced
  • 1/2 cup salad olives
  • 2 persian cucumbers, diced

Directions

  1. Cook pasta according to box
  2. Make vinaigrette by whisking together balsamic, olive oil, yogurt, mustard, honey, salt and pepper
  3. Drain pasta and let cool for a few minutes, then toss with vinaigrette
  4. Add all ingredients to pasta and toss to combine
  5. Refrigerate until ready to serve
