Y’all. We are more than half way through July! Our wedding is in 19 days. Ah!! It’s been a busy summer to say the least, so to counterbalance alllll the parties, showers, wedding tastings etc. I try and keep weeknight meals at home simple and on the healthier side. Quick and easy meals I can whip up without planning ahead. Which is why I’m excited to partner with MorningStar Farms® to share the recipe for this easy Falafel Buddha Bowl! It features their Falafel Burger, perfect for the summer grilling season!

The star of this veggie-packed bowl is MorningStar Farms® Falafel Burger, a new quarter pound vegan burger that features 100% plant based protein (9g!) made from beans and rice. I am not vegetarian, but I love a lot of vegetarian meals and find them easier to cook at home, especially with a busy schedule. Falafel are my favorite vegetarian protein source and I was really impressed with MorningStar Farms’ version made with garbanzo beans, rice, cilantro, parsley and onions. These burgers only take a little over ten minutes to cook from frozen, aka the perfect meal for when you come home from a long day at work and have no clue what to make for dinner. You can find them in the frozen food section at Walmart.

I make a quick bowl with the Falafel Burger by adding my favorite veggies and toppings. The tomatoes cook while you are cooking the burger and the rest comes together in about two minutes. The best part is a flavorful creamy tahini dressing made with lemon and garlic. Check out the recipe below!

Ingredients

  • One MorningStar Farms® Falafel Burger
  • One cup kale, thinly chopped (or spring mix if you’re not a kale fan)
  • 9-10 cherry tomatoes
  • 1 tsp avocado oil
  • 1/2 avocado
  • 1 tbsp crumbled feta
  • 1/4 cup tahini
  • juice from 1 small lemon
  • 1 tsp minced garlic
  • 2 tbsp cold water

Directions

  1. Cook Falafel Burger in a pan according to instructions
  2. Add cherry tomatoes and 1 tsp of avocado oil to the same pan, stirring every few minutes until they start to blister
  3. Make tahini dressing: add tahini, lemon juice, minced garlic and cold water to a small bowl and whisk to combine
  4. Add kale and one tbsp of the tahini dressing to a bowl and massage dressing into kale (I know it sounds weird, but its the key to making your kale taste less like kale and more delicious!)
  5. Top kale with cooked Falafel Burger, cherry tomatoes, avocado and crumbled feta
  6. Drizzle with about a tbsp of tahini dressing and serve

I used Walmart’s Online Grocery Pickup Service to snag the ingredients to make this buddha bowl – I love how convenient it is! Just pull up to the designated parking spots, call the number listed and you will be greeted by an associate within a few minutes. They bring your groceries right out to your car and go over the order with you before loading the groceries in your trunk. You seriously don’t even have to get out of the car!
