Firecracker Fish & Chips

Hi friends! I’m back to share another recipe in partnership with Gorton‘s. While we’re all minimizing trips to the grocery store, quality freezer staples have become more and more important. I love the idea of dressing up fish and chips at home. I took Gorton’s Fish Sticks, which are 100% whole fillet sustainably wild-caught Alaska pollock, and added a sweet and spicy firecracker sauce like you might find at a restaurant. Gorton’s flash-freezes their fish at the peak of freshness so you get great quality and tasting fish. The sauce really only needs two ingredients, Greek yogurt (or mayo if you prefer) and sweet chili sauce, but I added chili garlic sauce for an extra kick. If you don’t have sweet chili sauce, you can also do equal parts chili garlic sauce or sriracha and honey. 

Firecracker Fish Sticks, serves two

Ingredients

  • 10 Gorton’s Fish Sticks
  • 2 large russet potatoes, sliced into wedges
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup plain greek yogurt
  • 1/4 cup sweet chili sauce
  • 1/2 tsp chili garlic or sriracha sauce (omit if you don’t like spicy)

Directions

  1. Preheat oven to 450
  2. Microwave potato wedges for five minutes, stopping midway to stir
  3. Dry potatoes on paper towel, getting them completely dry before baking is what makes them crispy
  4. Toss potatoes with olive oil, salt and pepper
  5. Spread out potatoes on a baking sheet and bake for 10 minutes
  6. Make firecracker sauce by combining Greek yogurt, sweet chili sauce and chili garlic sauce
  7. Once potatoes have baked for 10 minutes, remove from oven and flip then add fish sticks to baking sheet and return to oven
  8. Bake potatoes and fish sticks for 10 minutes, remove from oven and flip fish sticks
  9. Return to oven and bake for 5-7 minutes more, until crispy
  10. Remove from oven and let fish sticks cool for 2-3 minutes then brush with firecracker sauce and serve
