Cottage cheese is having a moment and I’m here for it. I’ve always been a fan and love that it’s an easy high protein snack. I’ve seen all sorts of cottage cheese creations over Instagram, and wanted to try my own spin on a cottage cheese-ifying something we already love… so why not ranch?! I wanted a light and fresh dip for summer. I combined cottage cheese with fresh herbs and lemon juice, and of course ranch seasoning. You can easily customize with whatever you have on hand.. any fresh green herb would be nice, I want to add some mint next time! You could also add some garlic or lemon zest for extra flavor.
I served this dip with fresh veggies for snacking, as a topping for chicken and veggies, and a dressing for salads. A note on cottage cheese – if you’re not a fan of the texture, I find pulsing it in the food processor gives it a creamier texture. But if cottage cheese totally grosses you out, this probably isn’t the recipe for you 😉
Herby High Protein Ranch Dip

1 cup cottage cheese
1 cup fresh basil
1 cup fresh parsley
5-6 green onions
3 tbsp lemon juice
1 packet ranch dressing seasoning
Directions
Add all ingredients to a food processor and combine until creamy (2-3 min).
