One Pan Popcorn Shrimp & Sweet Potato Fries with Sweet & Spicy Aioli

I still remember the first time I had popcorn shrimp. I was 7 or 8 years old at a fancier dinner with my family and my mom wanted me to try something different than the typical kid’s menu of chicken fingers or grilled cheese. I ordered popcorn shrimp and have been hooked ever since! I’m excited to partner with Gorton’s to share a recipe for Popcorn Shrimp and Sweet Potato Fries with a Sweet and Spicy Aioli. This recipe comes together all on one sheet pan, so it’s easy to throw together for a weeknight dinner for the fam. To make things even easier, you could slice the sweet potatoes ahead of time during your meal prep for the week.

One Pan Popcorn Shrimp & Sweet Potato Fries with Sweet & Spicy Aioli, serves 2

Ingredients

  • Gorton’s Popcorn Shrimp
  • 2 sweet potatoes, sliced into 1/3 in thick matchsticks
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp chili powder
  • 1/4 cup sweet chili sauce
  • 1/8 cup ketchup
  • 1/8 cup mayo

Directions

  1. Preheat oven to 425
  2. Microwave sweet potatoes for 5 minutes
  3. Pat dry sweet potatoes removing all moisture, this is what makes the fries crispy
  4. Toss fries with olive oil, salt, pepper, garlic powder and chili powder
  5. Arrange fries on sheet pan and put in the oven for 10 minutes
  6. Make aioli by whisking together sweet chili sauce, ketchup and mayo
  7. Remove pan from oven and toss fries, add 1/2 package of popcorn shrimp to the pan
  8. Put in oven for 8 minutes, then remove and flip shrimp and fries
  9. Put back in oven for another 8 minutes until golden brown and crispy
