One Pot Creamy Butternut Squash Pasta with De Cecco

It finally feels like fall outside and I’m craving warm and comforting dishes, like pasta. I’m excited to team up with De Cecco to share this recipe for a Creamy Butternut Squash Pasta. It’s a one pot recipe, so it’s really simple to accomplish on a weeknight and serve a dish your whole family will love! The squash cooks down to coat the pasta and create a sauce. Add just a little parmesan cheese and butter at the end and it all comes together. The warm savory flavors make this a great dish for Friendsgiving or even a side dish for Thanksgiving!

It’s so good, you don’t need many ingredients for a delicious pasta dish! Their pasta is air dried, instead of heat dried like most brands, which keeps the pasta porous so it holds on to the sauce evenly. A little goes a long way, the pasta really is the star in any dish you make with De Cecco! I used their cavatappi for this recipe; the spiral noodles were perfect for the butternut squash sauce. One Pot Creamy Butternut Squash Pasta, serves 5-6

Ingredients

  • 3 cups De Cecco Cavatappi Pasta
  • 2 cups butternut squash, diced
  • 1/4 white onion, diced
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried sage
  • 1 tsp salt
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • 3 1/2 cups chicken or vegetable broth
  • 1/2 cup grated parmesan*
  • 1/4 cup butter

*The more parmesan you add, the creamier the pasta gets. I’d start with 1/2 cup, then add a little extra if needed.

Directions

  1. Heat olive oil over medium heat in a large stock pot or dutch oven.
  2. Add onion and butternut squash, saute until tender, 8-10 minutes. Season with the basil, sage, salt, oregano and thyme.
  3. Add broth and pasta. Cover pot and bring to boil.
  4. Once boiling, uncover and let boil for 10 minutes until liquid is mostly dissolved. Stir every few minutes, more often towards the end.
  5. Add parmesan and butter and stir until combined.
