New recipe for you friends! I was in Denver a month or so ago and tried a pesto guacamole dip at Quality Italian and absolutely loved it. Such a simple combination, but so much flavor and an easy way to kick guacamole up a notch. You simple add in some pesto, parmesan and pine nuts to my favorite guacamole recipe! Instead of mashing the avocado, I cut it into chunks and stirred all the ingredients together, so you get the creaminess of guac, but still some good chunks for dipping.
This dip is great served with tortilla chips, but I actually love it with focaccia bread or pita chips! I’ve even taken the leftovers and used them on a sandwich or as a pasta sauce. Just thin it out a bit with some more olive oil and pasta water.
Pesto Guacamole Dip
Ingredients
- Three avocados, cut into .5 in chunks
- 2 tbsp olive oil
- 1/3 cup pesto
- Juice of 1/2 lemon
- 1/2 cup shredded parmesan cheese
- 2 tbsp toasted pine nuts
- 1 tsp salt
Directions
- Add avocado, olive oil, pesto, lemon juice and salt to a bowl and stir to combine
- Fold in parmesan and pesto
- Add to serving dish and drizzle with olive oil
- Sprinkle with parmesan and pine nuts for garnish
