Have you ever tried cantaloupe and prosciutto together? It’s one of the best salty-sweet combos out there. I first tried it in Italy, where its a common apertivo (appetizer). When I got a beautiful looking melon in my Teal Tractor CSA box this past week, I immediately headed to the grocery for prosciutto.
This simple summer salad makes a beautiful dinner and would be perfect for entertaining! It has all the colors and shows off the best of summer produce. Check out the easy recipe below!
Ingredients
- 1 cup cantaloupe, cut into 1in x 1in chunks (or if you have a fancy melon baller tool, that would look much prettier)
- 1/4 pound prosciutto sliced thin, then cut into 1/2in thick strips
- 4oz fresh mozzarella ciliegine (the little balls, or you could tear one big ball of mozzarella into small pieces)
- 5oz spring mix or fresh greens (I like the power greens mix from Kroger)
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 1 tsp salt
- 1/4 tsp pepper
- balsamic drizzle (optional)
Directions
- Add greens, cantaloupe, prosciutto and mozzarella to a salad bowl and toss.
- Make vinaigrette by whisking balsamic, salt and pepper together. Slowly pour in the olive oil while whisking until combined.
- Drizzle desired amount of vinaigrette over salad and toss to combine (or serve on the side).
- If desired, top with balsamic glaze and serve.
