Ramen Noodle Picnic Coleslaw

This post is for my ‘Big’ Aunt Marcia, a loyal blog reader. I have two Aunt Marcias, my mom’s sister and my grandfather’s sister. So when deciding on a differentiating name, between “Old” Aunt Marcia and “Big” Aunt Marcia, she went with Big! She used to make this delicious slaw at family gatherings. My mom got the recipe years ago and always made it for Fourth of July and summer cookouts, so I thought this would be a great time to share the recipe with you!

It’s such an easy recipe, comes together in about five minutes and can pretty much be made in one bowl. The ramen noodles (added dry) soak up the flavor of the dressing and add a nice crunch to the slaw. I also love that it’s not mayo-based, so it’s a tad lighter and you don’t have to worry about it sitting out at a cookout. You can also make this slaw ahead of time, just wait to add the ramen noodles until twenty minutes or so before you serve.

Ingredients

  • 1/2 cup sesame oil
  • 1/2 cup rice wine vinegar
  • 1/4 cup honey
  • 12 oz package broccoli slaw
  • 1 green pepper, diced
  • 3 green onions, diced including the green part
  • 1 package ramen noodles (any flavor will do, but oriental is best) broken into 1/4 in pieces
  • 2.25 oz package slivered almonds

Directions

  1. Make the dressing: add sesame oil, rice wine vinegar, honey and half the seasoning packet from the ramen noodles to a bowl and whisk to combine
  2. Add broccoli slaw, diced peppers and green onion, ramen and slivered almonds to a bowl*
  3. Add about 3/4 of the dressing to the slaw and mix to combine, adding more dressing as needed

*If you’re making this ahead of time, wait about 20 minutes before you’re ready to serve to add ramen noodles and slivered almonds
