Buffalo Chicken Sliders

Is there anyone who doesn’t love buffalo chicken?! When I polled y’all about your favorite Super Bowl food, buffalo chicken dip was by far the front runner. I love a good buff chicken dip, so I wasn’t going to try and recreate it, but I thought, what if I make a slider with all the same flavors. I love making sliders on Hawaiian rolls. I took some shredded chicken and mixed it together with buffalo sauce, cream cheese and ranch seasoning. Layer that with some cheese and top the sliders with melted butter and more ranch seasoning. They come out of the oven warm and cheesy, with a slighty crisp crust on the bun. So, so good! 

Buffalo Chicken Sliders, makes 12

Ingredients

  • 12 Hawaiian rolls
  • Three cups roughly shredded chicken
  • 3oz cream cheese, about a 1/3 of a bar
  • 1/3 cup buffalo sauce
  • 1oz ranch seasoning packet
  • 6 slices cheddar or colby jack cheese
  • 3 tbsp melted butter

Directions

  1. Preheat oven to 350.
  2. Combine shredded chicken, cream cheese, buffalo sauce and 3/4 of the ranch seasoning.
  3. Slice Hawaiian rolls in half, spread buffalo mixture on the bottom half, layer cheese, then top buns.
  4. Combine melted butter with remaining ranch seasoning, brush on top of rolls.
  5. Cover rolls with foil and bake for 15 minutes.
  6. Remove foil and bake for additional 5-10 minutes until cheese is melted.
