Derby de Mayo with Screamin’ Mimi’s Salsa

Hi friends! Two fun holidays are coming up and I’m excited to team up with Screamin’ Mimi’s again to share a ‘Derby de Mayo’ party! Screamin’ Mimi’s is a local company that makes my favorite Sweet Hot Salsa. It’s sweet, followed by a little kick of heat. Don’t be afraid of the ‘hot’ in the name, Sweet Hot is more of a mild salsa, while ‘Sweet Hotter’ has more of a kick, and ‘Sweet Hottest’ is for spice lovers. Given that Screamin’ Mimi’s is a salsa company based in Lexington, KY, and Derby always falls right around Cinco de Mayo, it only seemed fitting that we throw a ‘Derby de Mayo’ themed party. It’s a fun way to switch things up from your typical Derby party. I’ve put together a menu featuring Kentucky classics, but with a ‘Sweet Hot’ twist. Screamin' Mimi's Salsa

Sweet Hot Pork Tenderloin Sliders, makes 24 sliders

Ingredients

  • 2 pork tenderloins, about 2.5 pounds total
  • 2 tsp salt
  • 1 tsp pepper
  • 1/4 cup brown sugar
  • 2 tbsp & 4 tbsp dijon mustard
  • 1 tbsp & 1 tsp dried oregano
  • 2 tbsp olive oil
  • 2 packages of 12 Hawaiian rolls
  • 12 slices pepper jack
  • 2/3 cups Screamin’ Mimi’s Sweet Hot Salsa
  • 6 tbsp melted butter
  • 1/2 tsp garlic powder

Directions

  1. Preheat oven to 400
  2. Pat down pork tenderloin with a paper towel and season with salt and pepper
  3. Combine brown sugar, 2 tbsp dijon and 1 tbsp oregano and rub all over pork
  4. Heat olive oil in a large pan over medium high heat and sear pork on all sides for about 5 minutes
  5. Place pork on a rack over a baking sheet and bake for 20-25 minutes until a thermometer inserted into the thickest part reads 155 fahrenheit 
  6. Let pork rest for 10 minutes before slicing 1/4 in thick; you can also wrap the entire pork tenderloin in foil and refrigerate for a day or two until you’re ready to make sliders
  7. Preheat oven to 350
  8. Slice rolls in half and spread 2 tbsp dijon over both bottom halves
  9. Layer sliders with half the pork, 6 slices pepper jack and 1/3 cup salsa each
  10. Combine melted butter, garlic powder and 1 tsp oregano and brush over top of rolls
  11. Cover with foil and bake for 15 minutes; uncover and bake for another 5-10 minutes until cheese is melted
