Bacon Egg & Cheese Tarts

Y’all know I love my mini phyllo cups. They are so versatile and make the perfect little appetizer or snack. You find them in the freezer section next to pie crusts. I had some extra shells around the holidays and needed to make something for Christmas Eve brunch, and ended up with these Bacon Egg & Cheese Tarts. Easy, cheesy, crunchy, buttery… just all the good things. Perfect for entertaining at brunch!

Bacon Egg & Cheese Tarts, makes 36

Ingredients

  • 10 eggs
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp butter
  • 1/2 cup shredded sharp cheddar cheese
  • 10 slices bacon, crumbled
  • 36 mini phyllo cups

Directions

  1. Preheat oven to 350.
  2. Add eggs to a large bowl with salt and pepper and whisk until smooth.
  3. Heat butter over low heat until fully melted; swirl around the pan.
  4. Add eggs to the pan and slowly scramble – it will take 7 minutes or so. Don’t be tempted to turn up the heat! Just push eggs around the pan with a spatula every 30 seconds or so at first and more vigorously when they start to scramble.
  5. When eggs aren’t quite yet set, about 6 minutes in, add cheese and stir into eggs with spatula.
  6. Remove eggs from heat and add crumbled bacon. Stir to combine.
  7. Fill phyllo cups with egg mixture.
  8. Bake for 10-12 minutes.
