Winter Kale Salad with Salmon

I’ve got a hearty winter salad recipe for you! I love a good kale salad. If you’re not a fan of kale, I’d encourage you to try it this way. The trick to a good kale salad is to massage the dressing into the greens with your hands. It breaks down the kale so it’s tender and honestly delicious. I used orange juice and zest in this dressing to punch things up a bit.

Winter Kale Salad with Orange Vinaigrette, serves 2

Ingredients

  • Gorton’s Natural Catch Grilled Salmon fillets
  • 1 large bunch kale, chopped
  • 1 orange, peeled and diced
  • 1/3 cup dried cherries
  • 1/3 cup goat cheese crumbles
  • 1/4 cup slivered almonds
  • 2 tbsp hemp hearts
  • 1/4 cup orange juice
  • 1/4 cup olive oil
  • 1 tsp dijon mustard
  • 1 tbsp balsamic vinaigrette
  • 1/2 tsp pepper
  • 3/4 tsp salt
  • zest of 1 orange

Directions

  1. Cook salmon according to package.
  2. Make vinaigrette in a large bowl: add orange juice, balsamic, dijon, salt, pepper and orange zest and whisk to combine. Slowly add in olive oil while whisking until fully combined.
  3. Add kale to bowl and massage dressing into greens with hands.
  4. Add orange pieces, dried cherries, almonds, goat cheese and hemp hearts to bowl and toss to combine.
  5. Divide salad between two bowls and top with salmon.
