Y’all know I love my mini phyllo cups. They are so versatile and make the perfect little appetizer or snack. You find them in the freezer section next to pie crusts. I had some extra shells around the holidays and needed to make something for Christmas Eve brunch, and ended up with these Bacon Egg & Cheese Tarts. Easy, cheesy, crunchy, buttery… just all the good things. Perfect for entertaining at brunch!
Bacon Egg & Cheese Tarts, makes 36
Ingredients
- 10 eggs
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tbsp butter
- 1/2 cup shredded sharp cheddar cheese
- 10 slices bacon, crumbled
- 36 mini phyllo cups
Directions
- Preheat oven to 350.
- Add eggs to a large bowl with salt and pepper and whisk until smooth.
- Heat butter over low heat until fully melted; swirl around the pan.
- Add eggs to the pan and slowly scramble – it will take 7 minutes or so. Don’t be tempted to turn up the heat! Just push eggs around the pan with a spatula every 30 seconds or so at first and more vigorously when they start to scramble.
- When eggs aren’t quite yet set, about 6 minutes in, add cheese and stir into eggs with spatula.
- Remove eggs from heat and add crumbled bacon. Stir to combine.
- Fill phyllo cups with egg mixture.
- Bake for 10-12 minutes.
